Volatile characterization
Characterization refers to volatile profiling plus measurement of aroma activity. We employ all the tools associated with volatile profiling, plus we conduct gas chromatography olfactometry (GCO). This information may be utilized to find an off-flavor in a product. It also is useful to determine key aroma impact compounds for QA. We utilize a time intensity method along with voice recognition.

Our experience with GCO dates back to 1993 when Russell Bazemore worked with Mina McDaniel at Oregon State University as a grad student. Mina developed the Osme time intensity technique.
